How can I make ethanol gel burn a little brighter, with a more yellow/orange flame?

I think you are going to have a hard time mixing something with ethanol gel, I don't think it will stir in very well. If you want a bright flame, maybe you can use those sticks they sell to get a camp fire (or fireplace fire) going. They are something sort of fiberous and absorbant infiltrated with molten wax or something like that. You might even be able to use those fake fireplace logs that are sawdust sogged with wax cut up into smaller chunks. If this something people will be carying (like a real torch) you will need some kind of handle and a container (maybe a tin can screwed to the end of a piece of broom handle or something like that. You could also try wrapping the end of a heavy stick with many layers of newspapers and wiring it securely in place. Then soaking in kerosene. What ever you do test it very carefully to see that it is safe (like flaming material can't spill out or come flying off it easily).
